Steam Rice Machine

Our steam rice cooking system provides safe germ-free rice which will stay fresh for a long time.

In spite of our rich food conditions, food waste has been increasing due to leftovers and oversupply of food. Also, decreased antibacterial activity of human being and newly discovered bacteria, food poisoning has been getting marked. To improve such situations, we have invented “continuous steam rice cooking system” for making “safe germ-free rice which will stay fresh for a long time”.

Non-immersed Rice

Typically, when you cook rice in a rice cooker, you first wash and immerse the rice. However, as our device uses superheated steam, it is able to thoroughly embed the moisture in the rice, making (industry-first) non-immersed rice possible. This enables the 60-90 minutes of time used for washing and soaking the rice to be saved, thus increasing work efficiency.

The running cost of the steam rice cooker for cooking 1 kg of rice is about an half of that as cooked with a conventional gas rice cooker. The steam rice cooking system is excellent in energy efficiency since steam to be a heat source is sprayed in an almost closed environment.

Since our machine is a small boxed rice cooker incorporating a first and second conveyors (for steaming) and a third conveyor (for seasoning), the machine is space saving and can be fitted to many places.

We use an interactive touch panel which is easy to operate. After putting the button, a rice cooking process will be conducted completely automatically, so anyone can cook rice at a specific level of quality.

Long-life rice and prevention of etiolation

The steam rice cooking achieves rice cooking with superheated steam at over 100℃ and it can prevent etiolation of rice by promoting pregelatinization thereof and sterilizing sporular soil bacterium.

Resistant to cooling and re-heating

In a general central kitchen, rice is once cooled to 1 to 2℃ and then re-heated at each facility to which the rice is delivered for 15 minutes at 80℃ or more.

Increase in volume and mass reduces quantity of rice to be used

Increase rate (expanding rate) of steamed rice can be adjusted to about 2.3 to 2.6 times, which is higher than rice cooked in a pot (2.15 times).
(When 1 ton of rice is cooked, the amount of rice can be reduced for about 30 kg or more.)

Rice with a soft yet firm texture

Under steam rice cooking, the core temperature of rice can be heated to 100℃ in 3 minutes.In addition, since the rice layer formed in a predefined thickness on a stainless net is steamed while gradually adding water, rice becomes moist and “soft inside yet hard outside”, which is the ideal rice.The rice is also excellent in formability and suitable for rice balls or sushi.

Perfect for vinegared rice and red rice

The steam rice cooking can control water absorption on the rice surface. Therefore, by spraying vinegar over the rice at an optimal point during the process, the equivalent seasoning becomes possible. There is no necessity of stirring / mixing rice by a manual operation. On top of that, since the rice is cooked by steam, the cooking process is optimal for red rice, rice with red beans, grains and the like.

Maintenance

Remote maintenance

Our maintenance service can check up users’ rice cooking line and change / improve / fix the software by accessing the system via Internet connection.

  • 1. We start the inspection of each failure and promptly fix the trouble.
  • 2. The cost for fix or checkup is reduced in comparison with the case where we directly visit your company.
  • 3. We can do a checkup or setting of timer cooking or rice cooking recipes, and an analysis of operation records (log) of rice cooking line.
Remote maintenance

Regular inspection

We conduct a regular inspection so that the equipment is always operated safely in a good condition. (*Maintenance contract is necessary.)

  • 1. The equipment maintenance becomes possible by regularly conducting an inspection.
  • 2. By finding out each failure in advance, a breakdown maintenance becomes easier.
  • 3. The preventive maintenance such as inspection, fix, parts exchange can be done in a structured manner.
